Do you often ask how to marinate pork ribs? I found a method thanks to a dear friend who works as a chef in a restaurant specialized in barbecue; he taught me a couple of tricks to remove excess fat without taking away the fat that keeps the meat tender. By marinating it as I explain just after the photo, the meat becomes flavorful, tender and the cooked-fat taste is not noticeable at all.

Ingredients to marinate pork ribs
- 4.4 lbs pork ribs
- 3 tbsp soy sauce
- 5 tbsp extra virgin olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- 1 tbsp mustard
- 2 pinches salt
- 2 pinches pepper
- 2 tbsp balsamic vinegar (or lemon juice)
- to taste aromatic herbs (sage, rosemary, thyme, parsley)
How to marinate pork ribs
To marinate the pork ribs, whether you have them in one piece like ribs or cut individually, the first thing to do is place them in a large bowl with 3 cloves of garlic, thinly sliced, and cover with very cold water.
Cover the bowl with plastic wrap and put it in the refrigerator for at least 5 hours.
This way you will see the water turn cloudy and the ribs will also change color; don’t worry, they will turn out perfect.
After the time has passed, drain the meat, pat it dry and set it aside for a moment while you prepare the flavorful marinade.
In a bowl, mix all the ingredients for the marinade and the aromatic herbs, coarsely chopped.
Add the ribs, turn them a couple of times and massage them with your hands to help them absorb the flavors, cover with plastic wrap and place in the refrigerator.
After 3 hours the pork ribs are ready to be cooked in a skillet, over coals, on the BBQ or in the oven — you decide how.
Once well marinated, drain them from the marinade. If you cook them in the oven, place them on a baking sheet, brush with a little of the marinade and bake, turning halfway through cooking and brushing again with the marinade.
To cook them in a skillet, heat a large pan very well, arrange the ribs and on high heat brown them on all sides.
Then add the marinade, cover with a lid and cook for 30 minutes.
Remove the lid, turn the ribs and finish cooking without the lid.
To cook them over coals, once the coals are ready place the ribs on the grill and brush them often with the marinade, turning them a couple of times.
How to store marinated pork ribs
You can leave pork in the marinade for up to 8 hours, always refrigerated and covered with plastic wrap.
Variations
If you don’t like balsamic vinegar you can use the juice of 1 lemon.
A milder-flavored marinade can be obtained by replacing half of the extra virgin olive oil with about 3.4 fl oz of dark beer.
