  • 2 cups orange juice (strained (about 500 g / ≈17.6 fl oz))
  • 6.5 tbsp granulated sugar (≈80 g)
  • 6 tbsp + 1 tsp cornstarch (≈50 g)

Preparation of orange gelo

  • Take the oranges, preferably organic and Sicilian, and juice them with a citrus juicer. You’ll need about 7–8 oranges.

  • Then strain the juice through a strainer and pour it into a small saucepan. You’ll need about 2 cups (≈500 g) of juice.

  • In another saucepan put the sugar and cornstarch, whisk them together, then slowly pour in the strained juice in a thin stream. Try to avoid lumps.

  • Once all the juice is incorporated, place the pan on the heat and cook. Stir well and as soon as it begins to thicken, turn off the heat.

  • Pour the gelo into pudding molds (I used six small ones) and let it cool, then place it in the refrigerator.

    In individual cups It’s the most classic and practical way. You can use glass or ceramic bowls to highlight the bright color of the dessert.
    With a sprinkle of cinnamon A light touch that enhances the citrus aroma and adds a warm, cozy note.
    Garnished with grated orange zest or candied orange strips Adds freshness, color and an irresistible aroma.
    Paired with crisp cookies Perfect with ladyfingers, langue de chat or almond cookies: the crunch contrasts nicely with the smooth texture of the gelo.
    Set in molds For a more showy effect, let it set in individual molds and unmold right before serving. (as I did)

How to store orange gelo and for how long

Orange gelo keeps very well, especially if made with fresh ingredients and allowed to cool properly.
In the refrigerator: store it in closed containers or covered with plastic wrap in contact. It stays fresh and keeps its perfect texture for 2–3 days.
In individual portions: if you prepare it in cups or molds, you can store it already portioned; it’s handy and stays perfect until serving.
Do not freeze: gelo tends to become watery once thawed, losing its smooth and velvety texture, so it’s best to avoid freezing.
Fresh decorations: add zest, fruit or cream only at serving time so they stay bright and fragrant.

Orange gelo, with its freshness and delicate sweetness, pairs well with light, aromatic wines that accompany the citrus without overpowering it.
