The pink beetroot pasta is a simple and colorful first course created to celebrate Barbie’s birthday. In fact, March 9 is “Barbie Day”, the most well-known and best-selling doll in the world. For the recipe I used heart-shaped durum wheat semolina pasta, but feel free to use your preferred shape. The peculiarity is its fuchsia color, reminiscent of the famous Barbie brand, provided by the beetroot and softened with cream to give a creamy texture. A perfect recipe to make this vegetable appealing to children.

Ingredients
- 3 oz semolina pasta (durum wheat semolina, heart-shaped or any other shape)
- 3 oz (about 1/3 cup) cooked red beets (boiled)
- to taste cooking cream
- to taste Parmigiano Reggiano PDO
- to taste crushed pistachios
- to taste extra virgin olive oil
- to taste fine salt
- to taste black pepper

Steps
To prepare the pink beetroot pasta…
First, bring a pot of water to heat. When it boils, add the pasta and cook it for the time indicated on the package.
While the pasta cooks, place the already cooked red beetroot in the food processor, cut it into smaller pieces, add a little water and blend finely until you obtain a cream.
Using a spatula, pour the beetroot cream into the frying pan, add the extra virgin olive oil and warm it slightly for a few minutes.
When the pasta’s cooking time is up, drain it and add it to the pan with the beetroot cream.
Add the cooking cream, season with salt, pepper and grated Parmigiano Reggiano and, if necessary, add a little water to properly combine everything.
Serve hot, garnishing as desired with crushed pistachios and an extra sprinkle of grated cheese.
