- 1.4 oz lemon zest (grated)

Steps for Mimosa Baskets
Let’s prepare the sponge cake for the mimosa effect:
Beat the eggs with the sugar for 15 minutes, until you have a soft and foamy mixture. Once it’s ready, add vanilla extract, baking powder, and sifted flour.Mix the batter with upward strokes to incorporate the ingredients, but be careful not to deflate the mixture. Bake in the oven for 12 minutes at 392°F, take them out and let them cool. Then cut the sponge cake to create the mimosa effect, but first carefully remove the crust that forms during baking.
Let’s focus on preparing the baskets with puff pastry:
Roll out the puff pastry sheet and cut out the baskets with the cookie cutter, place the pastry in the muffin cups and prick the bottom with the tines of a fork. Now sprinkle the puff pastry baskets with a little sugar and bake in the oven at 392°F for about 12/15 minutes.
Once ready, take them out and let them cool, in the meantime prepare the custard here’s how to make it. Pour a little sponge cake into each puff pastry basket and fill with custard, finally decorate the basket with the sponge cake to create the mimosa effect. Before serving, dust with powdered sugar and enjoy!
