Ingredients
- 18 oz Pleurotus mushrooms
- 2 oz rustic bread (or sliced sandwich bread)
- 1 tbsp breadcrumbs
- 1 clove garlic
- parsley
- extra virgin olive oil
- salt
- pepper

Preparation
Start by cleaning the pleurotus: remove the dirty end of the stem, separate the mushrooms from the cluster and gently clean caps and gills with a damp cloth. Only if necessary, rinse them quickly and dry thoroughly.
Place the peeled garlic, a bunch of parsley and the torn rustic bread into a small food processor.
Chop for a few seconds and transfer the mixture to a bowl.
Add salt, pepper, a scant tablespoon of breadcrumbs and a drizzle of oil. Mix well.
Take a sufficiently large baking dish and brush it with a little oil. Arrange the mushrooms and sprinkle with the aromatic mixture. Make at most a couple of layers to help them cook evenly.
Brush the surface with a little oil and place the tray in a convection oven at 356-374°F and bake for 20-25 minutes.
The gratinated pleurotus mushrooms are ready; serve them hot or warm as a tasty side dish.
Tips and notes
You can adapt the recipe to other varieties of mushrooms, such as champignons or cardoncelli (sliced thinly).
You can flavor the bread with herbs to taste, fresh or dried: thyme, oregano, mint, marjoram, etc.
