Ingredients for the quick carrots and savoy cabbage side dish

  • 9 oz carrots (weight after trimming (about 4 medium carrots))
  • 5 oz savoy cabbage (weight after trimming (about 1 3/4 cups shredded))
  • 1 small bunch parsley
  • feta (quantity as desired)
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of the quick carrots and savoy cabbage side dish

  • Peel and trim the carrots, wash them, pat them dry with paper towels and cut them into thin sticks. Do not julienne them using a coarse-hole grater, because they would become too soft during cooking; rather slice them and cut sticks.

  • Finely slice the savoy cabbage. I used a slicer but a knife works just fine.

  • In a pan (or skillet), heat a few tablespoons of oil before adding the carrots. Sauté over medium heat for 5 minutes, stirring very often.

  • Then add the savoy cabbage and continue cooking for another 4 minutes, stirring frequently. The vegetables should be dry and the carrots still slightly crunchy.

  • Season with salt and pepper to taste, give one last stir then turn off the heat.

  • Transfer the vegetables to a serving plate, add crumbled feta (use as much as you prefer) and finish with chopped parsley.
