The recipe is very simple and perfect for a healthy lunch without giving up taste. To prepare this salad, I emulsified fresh strawberries with extra virgin olive oil and balsamic vinegar. I then used this vinaigrette to dress the salad, to which I added chopped strawberries, pine nuts and a fresh burrata. If you prefer, you can enrich it by toasting the pine nuts for a few minutes in a pan and adding some fresh basil leaves. Burrata is a pearl of Italian cheesemaking. I love when, when cut, it shows its soft, creamy stracciatella filling. This salad is fresh, very easy and doesn’t require much preparation, but in its simplicity it brings a distinctive and colorful dish to the table. Steps
First, clean the strawberries by removing the green tops and then rinse them very well under running water to remove any dirt. Pat them dry with paper towels and put 3 strawberries, chopped, into the blender. Add the olive oil and balsamic vinegar and blend until you obtain a smooth, lump-free cream. This will be the dressing for the salad.
Next, slice the remaining strawberries. Place the salad greens in a bowl, add the previously chopped strawberries and the burrata. Then add the pine nuts and season with salt and pepper.
Dress the salad with the vinaigrette, add a little more oil if desired, and serve.
