  • 2 cups chickpea flour (250 g)

  • 3/4 cup grated carrots (80 g)
  • 3/4 cup grated zucchini (80 g)

How to prepare the chickpea fritters with vegetables

  • Place the chickpea flour, salt, turmeric and pepper in a bowl. Mix with a spatula.

  • Add the water and whisk until smooth with a hand whisk.

  • Add the grated zucchini and carrots. (Let the zucchini drain after grating and squeeze them with your hands before adding them to the batter). Mix with the spatula.

  • Pour a drizzle of oil into a nonstick pan and brush it with a kitchen brush to distribute it evenly over the surface.

  • When the pan is hot, take a heaping tablespoon of batter and pour it into the pan, flattening it slightly to form a small fritter. Cook over medium heat for about 2–3 minutes per side, turning them gently with a spatula when the edges are golden and start to release easily.

Storage

The fritters keep in the refrigerator in an airtight container for 2 days. To restore crispness, heat them for a couple of minutes in a pan or in an air fryer before serving.

  • I don’t have turmeric, what can I use?

    You can omit it or use curry for a more exotic flavor, or sweet paprika for an orange color.
