Today I present the recipe for baked gratinated fennel with cherry tomatoes, olives, and breadcrumbs; a simple and flavorful side dish to accompany fish, meat dishes, or to enjoy as a light and tasty dinner. The sweetness of the fennel, the freshness of the tomatoes, and the addition of olives give this dish a delicate and flavorful taste. To add an extra touch, I added breadcrumbs for a crunchy note that makes this side dish even more inviting.
Easy to prepare with simple and genuine ingredients, just wash the fennel well, cut them into thick slices, and season them in a bowl with cherry tomatoes, extra virgin olive oil, salt, pitted olives, and breadcrumbs. Then, mix everything with a wooden spoon and bake.

Add salt and the washed and halved cherry tomatoes.
Add the breadcrumbs and mix everything.
Arrange the fennel in a baking dish with olive oil.
