I love savory pies so much, I usually make them as an alternative to pizza on Saturday nights. This one is especially simple and quick to prepare because you only need a roll of puff pastry as the base.
In the filling, I used perlina eggplant, which is a uniquely shaped long and narrow eggplant.
Its taste is particularly sweet, its flesh firm and compact, and it cooks in 10 minutes without absorbing much oil.
Perfect for many dishes, whether as a main or side, sliced into rounds as I did in this pie, or diced.

Ingredients
- 9 oz perlina eggplants
- Half white onion
- 1 cup cherry tomatoes
- 1 tbsp pickled capers
- 2 tbsps grated Parmesan cheese
- 3.5 oz mozzarella cheese
- 2.5 oz diced bacon
- 1 sheet rectangular puff pastry
- to taste salt
- to taste oregano
- to taste extra virgin olive oil
Steps
Let’s start preparing the ingredients for this recipe by washing the cherry tomatoes and cutting them into quarters.
Continue with the eggplants by washing them, cutting off the stem, and then slicing them into rounds.
In a pan, pour some extra virgin olive oil and the finely chopped onion, and let it soften over low heat.
Add the eggplants and cherry tomatoes.
Season with salt, oregano, and the rinsed and squeezed capers.
Cook for 10-15 minutes, stirring occasionally. If needed, add a splash of water during cooking as this type of eggplant is not watery.
After cooking the eggplants, place the bacon in a non-stick pan and brown it without oil.
Open the puff pastry sheet and place it in a baking dish, pricking the bottom with a fork.
Place the cooked eggplants inside and sprinkle grated Parmesan cheese on top.
Finish with the addition of browned bacon and cubed mozzarella cheese.
Before baking, close the outer edges.
Bake at 392°F for 20 minutes.
