The mimosa cheese balls are an easy and quick appetizer, perfect for International Women’s Day (March 8) and spring aperitifs. Colorful, tasty and ready in a few minutes, they are also perfect as very quick Easter starters and indulgent treats. A reinterpretation even easier and quicker than my ham-stuffed cheese balls, but with a cheerful appearance that truly resembles the mimosa, the flower symbol of March 8. They pair wonderfully with mimosa canapés, perfect to build a small buffet or themed aperitif.
In less than 10 minutes you’ll bring to the table a tasty and showy appetizer: the ideal solution if you have little time but still want to prepare something pretty to celebrate International Women’s Day with friends and family.

Ingredients
- 7 oz cream cheese
- 1.4 oz grated Parmesan cheese
- 1 tbsp extra virgin olive oil
- to taste pepper
- 2 hard-boiled eggs
Recipe: mimosa cheese balls
In a bowl combine the cream cheese, grated Parmesan, extra virgin olive oil and a grind of pepper.
Mix everything very well until all the ingredients are well combined.
Chill in the refrigerator for at least 15 minutes.
Meanwhile, cook the eggs so that they are hard-boiled. If you don’t know how to make them perfectly, find my guide on how to make hard-boiled eggs.
Coarsely chop separately the hard-boiled yolks and whites and place them on two separate plates.
Take the mixture from the refrigerator and form walnut-sized balls (about 0.7 oz).
Roll each ball first in the chopped egg white and then in the yolk to achieve the classic mimosa effect.
Place them one by one into the paper liners and serve.
A small bite of flavor and cheer, perfect to share with friends and family.

Storage and tips
Storage: cheese balls can be kept in the refrigerator, covered with plastic wrap or in an airtight container, for up to 2-3 days.
Tips: the mixture may be slightly sticky: don’t worry, it’s normal! This consistency helps the balls adhere better to the chopped white and yolk, ensuring the perfect mimosa effect.
