- 1 zucchini
- 1 red bell pepper (or yellow)
- 1 carrot
- 1 spring onion
- 2 tbsp soy sauce

Let’s start preparing udon with vegetables: first, clean the bell pepper and cut it into strips and then into thin slices. Trim and slice the spring onion.
Cut the zucchini and the carrot into sticks.
Heat a drizzle of extra virgin olive oil in a wok and add the spring onion and the carrot.
Let them brown and add the bell pepper and the zucchini.
Lightly salt and let the vegetables soften in the pan over medium heat.
Now add the udon and let them cook for 3-4 minutes, add the soy sauce and toss the udon with the sesame seeds
