Onion Focaccia

Onion Focaccia is a recipe with few ingredients, easy to make. Perfect for a dinner or an aperitif with friends. The ingredients are few and simple. With flour, oil, and brewer’s yeast we will obtain a soft, tall and tender focaccia. For the topping, I chose a rustic one: red onion and oregano. We can top the focaccia however we prefer; we can replace the onions with rosemary and potatoes… or only with tomatoes… or onions and tomatoes… In short, as always, plenty of room for your imagination.

But now let’s go to the kitchen and I’ll show you how to prepare the Onion Focaccia.

Ingredients

LET’S SEE TOGETHER WHAT WE NEED TO PREPARE

  • 3 1/3 cups type 1 flour (W 290, protein content 12.5% (400 g))
  • 1 1/4 cups water
  • 1 tbsp extra virgin olive oil
  • 1 1/4 tsp fresh yeast (about 4 g)
  • 1 tsp salt (about 6 g)
  • 3 red onions
  • extra virgin olive oil
  • salt
  • 1/2 cup water
  • oregano

  • 1 Frying Pan
  • 1 Knife

Steps

Let’s start preparing the

  • Let’s start preparing the onion focaccia: pour the flour into a bowl and add all the other ingredients. Start mixing with a spoon and then knead with your hands; transfer the dough to the work surface and knead vigorously for 10 minutes.
    Once you have a homogeneous dough, put it into a bowl and cover.
    Let the dough rise for about 2/3 hours away until it has completely doubled in volume.

Meanwhile, prepare the focaccia topping.

Slice the red onions and put them in a frying pan with a little oil and a little water; cook them for a couple of minutes, add the salt, and at the end of cooking add the oregano.

Place the dough in a rectangular baking pan 12 x 9 in and spread the dough completely by pressing it with your hands; let it rise for another half hour.

When the topping is ready, let it cool for a few minutes and then spread it over the focaccia that has finished rising.
Drizzle the focaccia with a little more oil, then bake it in a preheated conventional oven at 392°F for 15 minutes.

The onion focaccia is ready!!
