Ingredients

LET’S SEE TOGETHER WHAT WE NEED TO PREPARE

  • 11 oz pasta
  • 2 zucchini
  • 3.5 oz fresh cheese (robiola, certosino, ricotta or cream (about 3.5 oz / ~1/3 cup))
  • 1 shallot
  • extra virgin olive oil
  • salt
  • pepper

  • 1 Frying pan
  • 1 Hand blender
  • 1 Large deep saucepan

Steps

Let’s start preparing the

  • Let’s start preparing pasta with zucchini cream: first, take the zucchini, wash, trim and cut them into small pieces, then set them aside.
    Meanwhile, put the pasta to cook in plenty of salted water.

    Sauté the chopped shallot in a pan with a drizzle of extra virgin olive oil.

  • Add the zucchini we set aside to the pan and stir.

    Season with salt and pepper, cook for 5-10 minutes.

    When the zucchini in the pan are cooked, pour them into the blender cup and add the fresh cheese.
    Blend until you obtain a cream.
    Return the zucchini cream to the pan.

    Drain the pasta al dente directly into the pan with the sauce.
    Toss for a few minutes and, if needed, add a little of the pasta cooking water.
    Serve the Pasta with zucchini cream hot.
