Ingredients

LET’S SEE WHAT WE NEED TO PREPARE

  • 1 eggplant
  • 3 potatoes (small)
  • 1 egg
  • 1/2 cup (~1.8 oz) breadcrumbs
  • 1/3 cup (~1.4 oz) grated Parmesan cheese
  • chopped parsley
  • salt
  • extra virgin olive oil

Steps

Let’s start preparing them

  • Let’s start preparing the eggplant and potato meatballs: to make the meatballs, wash the eggplants and place them on a baking tray lined with parchment paper, or in an air fryer, then cook them at 392°F for 20 minutes. Once cooked, let the eggplants cool slightly and remove the skin.

    Place the flesh in a colander and press slightly with a fork to remove the excess liquid.

    Boil the potatoes, peel them and put them in a bowl.

  • Transfer the eggplant flesh to the bowl with the potatoes and add the egg, the cheese, salt, and the chopped parsley.

    Mix the mixture for the eggplant meatballs well to make it compact.

  • With your hands shape the meatballs and place them on a baking tray lined with parchment paper. Bake in a conventional oven at 392°F for 15-20 minutes.
