Tasty savory cookies, perfect to accompany holiday cocktails… they are quick to prepare because the dough does not need to rest, and they are perfect with cold cuts, cheeses, and sauces. They can be topped with seeds, herbs, and spices to taste: I used poppy seeds, sweet paprika, and mixed dried herbs, but you can also add sesame seeds, salt flakes, rosemary, or grated cheese. Ingredients

Preparation

  • Crack the eggs into a bowl, beat with a fork and transfer about a tablespoon to another container (you will need it later, for brushing).

    Add the oil, water, and salt, mix with the fork or a whisk.

  • Gradually incorporate the sifted flour and yeast, trying not to form lumps. Continue kneading on the work surface for a few minutes, until smooth and homogeneous dough is obtained (1).

  • Using the rolling pin, roll out the dough to a thickness of 1/8-3/16 inch, using a little flour if necessary.

    Cut out the cookies with the molds you have chosen (2), and place them on baking sheets lined with parchment paper. Re-roll the scraps until the dough is used up.

    As you fill the baking sheets, put them in the refrigerator so the cookies hold their shape better when baking.

  • Brush the surface of the cookies with the reserved egg and sprinkle with seeds, herbs, and spices to taste (3).

  • Place the cookies in a static oven at 356°F (or fan at 338°F) and bake for about 12 minutes. Adjust time and temperature according to your oven and the size of the cookies.

  • At the end, immediately remove the baking sheet from the oven and proceed with the other batches.

    Savory Christmas cookies are ready, I recommend serving them slightly warm or at room temperature.

Tips and Notes

With these quantities, I made about 70 small cookies, ideal in size for an appetizer. You can also make larger cookies if you prefer.

If you have leftovers, you can store them in a closed container for a couple of days. I recommend heating them slightly before serving.

Keep a close eye on baking to avoid the cookies darkening and taking on a bitter taste. Times can vary significantly from oven to oven.
