Ingredients for Ricotta Fritters
- 1 egg
- 2/3 cup ricotta
- 1/4 cup sugar
- Half orange zest (unwaxed)
- 1 1/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup vegetable oil (for frying)
- as needed granulated sugar (for dusting)
How to prepare the Sweet Spoon Fritters
In a bowl, simply whisk the egg with the sugar using a fork. Add the ricotta and stir to incorporate it into the egg. Continue with the sifted flour, the baking powder and the grated zest of half an unwaxed orange.
Mix well; the batter will be quite soft. Heat the vegetable oil in a small, deep skillet or saucepan.
Using 2 tablespoons, drop spoonfuls of batter into the hot oil. Let them puff up and brown on all sides. Drain them on paper towels. While still hot, roll them in granulated sugar.

Use a classic cow’s milk ricotta, which is more delicate. If it is very watery, let it drain in a sieve for half an hour: the drier it is, the firmer the fritters will be.
