- 12 oz cod fillets (thaw before use)
- to taste low glycemic index flour (for coating the fillets before cooking)
- 1/2 lemon (untreated, juice and zest)
- 1 tsp extra virgin olive oil
- 2 tbsp water
- 1 pinch fine salt
- to taste chopped parsley (fresh)

Recipe Preparation
Thaw the cod fillets, once defrosted, pat them dry with paper towels and coat them well in flour, covering all sides, and place them in a pan.
Wash the lemon, cut it in half and squeeze the juice of one half into the pan, add its grated zest, a pinch of fine salt, the oil, and the water and cover with the lid.
Cook over high heat for 15/20 minutes, during the last few minutes you can remove the lid, once the lemon cod fillets are cooked, serve them with a bit of fresh chopped parsley on top and enjoy your meal!
