Spiced air fryer zucchini, an easy and quick side dish, fragrant and with a spicy flavor.
The zucchini will remain crispy on the outside and soft on the inside, a real delight.
For the cooking, we used our Moulinex EZ5058 air fryer, very easy to use and perfect for a family of 3/4 people.

Ingredients for spiced air fryer zucchini:
- 4 light green zucchinis
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon breadcrumbs
- 3 tablespoons extra virgin olive oil
- to taste fine salt
- to taste black pepper
- to taste chopped sage
- to taste chopped rosemary
- to taste paprika (optional)

Steps for spiced air fryer zucchini:
Wash the zucchinis well, dry them, and trim the ends.
Cut the zucchinis into pieces of about 2.5 inches, then cut each cylinder in half and each half into 3 or 4 slices (to get wedges), do the same with all the zucchinis you have.
Place the prepared zucchinis in a large bowl, add 2 tablespoons of extra virgin olive oil and mix well.
Add the grated Parmesan cheese, breadcrumbs, salt, pepper, chopped sage, rosemary, and paprika if desired.
Mix well so that the zucchinis are well flavored.
Transfer the mixture to the air fryer’s grill and spray a little extra virgin olive oil.
Cook at 375°F for about 20 minutes, turning the zucchinis halfway through for even cooking.
After the cooking time, remove the spiced zucchinis and place them on a serving plate.
During cooking, the zucchinis will lose a lot of volume, do not be surprised if at the end of cooking you find the zucchinis almost halved in volume.

This recipe is very versatile and you can use any spices you like, they are also great with mint.
