For a not too demanding dinner with family or friends, what could be better than a savory pie with ricotta, speck, and radishes.
Anyone who thinks radishes are only enjoyed in salads makes a huge mistake.
Radishes are a tasty and crunchy vegetable that, besides being enjoyed raw in salads or sliced for sandwiches, can also be used in cooked dishes, like in my recipe of fusilli with tuna, radishes, and pine nuts.
The savory pie with ricotta, speck, and radishes, tasty and delicate, is perfect for any occasion: cut into small portions, it can be served as an appetizer, or if you are planning a celebration and want to organize a varied savory buffet, this savory pie is perfect!

- 2 1/3 cups all-purpose flour
- 2/3 cup water
- 2 tbsp extra virgin olive oil
- 2 tsp salt
- Half packet of instant yeast for savory pies
- 1 cup cow's milk ricotta
- 2 eggs (one is for brushing)
- 1/3 cup grated Parmesan
- 3.5 oz speck in strips
- 2.8 oz radishes
- to taste black pepper
- to taste nutmeg
- to taste fresh chives
- to taste sesame seeds

Steps
Let’s start preparing the base of our pie by mixing the flour with the instant yeast. In the middle, pour the lukewarm water, oil, and salt, knead until you obtain a soft dough.
If the dough is sticky, add a bit more flour.
Cover and let rest for 30 minutes.
Continue by washing and cutting the radishes and set them aside.
Take a bowl and add the ricotta, mashing it with a fork.
Incorporate a beaten egg and the grated Parmesan.
Season with nutmeg, pepper, and finely chopped fresh chives.
If you can’t find it fresh, you can use dried chives.
I usually wash and freeze it in strands in freezer bags when I find it fresh in the fridge section.
After preparing the filling, we can proceed by rolling out the dough, but before that, line a 8.6-inch diameter pan with parchment paper.
Divide the dough into two parts and start rolling out the dough.
Place the dough disc in the pan and prick the bottom with a fork.
Spread the ricotta filling and continue with the addition of speck and radishes,
Cover with the other dough disc, seal the edges, and prick with a fork.
Brush with the other egg and sprinkle with sesame seeds.
Bake at 356°F for 30/35 minutes.
