These Valentine’s Day heart cookies are simple to prepare. They take a little more time than classic ones and require a bit more dexterity, but it’s worth it! The result is really adorable.

Ingredients for Valentine’s Day cookies
- 1 3/4 cups all-purpose flour
- 1/3 cup butter
- 1/4 cup sugar
- 1 egg
- 1 tsp vanilla (paste with vanilla extract)
- 1 pinch salt
- 1 1/2 cups all-purpose flour

Preparation of Valentine’s Day cookies
We can prepare the shortcrust pastry using the Bimby or a mixer, by hand, but if you have a stand mixer, use that.
1 – Prepare the vanilla shortcrust pastry. Pour the flour into a mixer along with the butter cut into pieces. (if using a stand mixer, mix with the paddle). Pulse until the mixture is sandy. Add the sugar, egg, vanilla, and salt. Mix at medium speed and finish kneading. Once combined, transfer it to a floured work surface and form a dough ball.
2 – Prepare the cocoa shortcrust pastry. Pour the flour and cocoa into a mixer along with the butter cut into pieces. Pulse until the mixture is sandy. Add the sugar, egg, and salt. Mix at medium speed and finish kneading. Once combined, transfer it to a floured work surface and form a dough ball.
WITH BIMBY: First, prepare the light shortcrust pastry, put all the ingredients in the bowl and mix at speed 4 for 40 seconds. Remove from the bowl and compact well with your hands, then form a dough ball.
Do the same with the cocoa shortcrust pastry.
3 – Take the shortcrust pastry and divide the dough balls in half, then roll out half of the light and half of the dark, using flour to help. Use the heart-shaped cutters to create various “holes.”
4 – Fill these “holes” with hearts cut out from the different colored shortcrust pastry. Place the cocoa hearts in the vanilla dough, and vice versa. Do the same with the remaining halves of dough.
5 – Slightly flatten the dough with the rolling pin and then cut out the cookies using a round cutter, or if you prefer, you can use another shape.
BAKING: Place the cookies on baking trays lined with parchment paper, and bake them. 350°F static for about 15-20 minutes, they should lightly brown.
Notes
Instead of cocoa, you can use food coloring.
The cookies will keep for a couple of days stored in an airtight container or under a glass dome.
