Simple Baked Meagre

The simple baked meagre is an easy-to-prepare second fish course that is particularly tasty and succulent.

The meagre is a fish with soft and delicate flesh, and it’s a source of omega-3 fatty acids.

Ingredients

  • 1 meagre (about 1.65 lbs)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 sprig parsley
  • 1 small glass white wine
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • I recommend buying the meagre from your trusted fishmonger and asking for it to be gutted.

    Rinse the meagre under running water, let it drain, and pat dry with kitchen paper towels.

  • Take the meagre out of the fridge at least half an hour before cooking.

    Line a baking tray with parchment paper.
    Place the meagre on the tray.
    Season inside the belly of the fish with a pinch of salt and a pinch of pepper, a sprig of parsley, and drizzle with white wine.
    If you’re preparing this for children and prefer not to cook with wine, you can use lemon juice or orange juice.

  • Briefly preheat the oven.
    Bake at 400°F in a fan oven for 20 minutes + 10 minutes at 350°F.

  • Gently remove the meagre and place it on a plate to fillet and debone.
    If preparing for children, pay extra attention.

    Plate up.
    Grind some more pepper, add chopped parsley, and drizzle with a bit of extra virgin olive oil.
