- 2 tsp dry yeast
- 1 tsp sugar
- 1 cup water
- 2 tsp salt
- 7/8 cup tomato sauce
- 1 3/4 cups mozzarella cheese
- to taste extra virgin olive oil
- to taste oregano

How to make Sicilian mini pizzas
Put the flour, yeast, and sugar in a bowl, then pour the water and mix.
Knead with your hands and then add the salt and butter. You can also do this task with a mixer.
Knead until you get a smooth and nice soft ball, let it rest for 2 hours in a bowl covered with cling film, leaving it inside the preheated oven at 122°F.
After the resting time, roll out the dough with a rolling pin to 3/8 inch thick.
With a pastry cutter or a glass, make many small circles, transfer them onto a baking tray. Top with 1 teaspoon of tomato sauce, mozzarella, oregano, and oil.
Bake your Sicilian mini pizzas at 356°F for about 15-20 minutes or until golden brown.
Storage and variations of Sicilian Mini Pizzas
The Sicilian mini pizzas can be stored in an airtight container for a few days at most; alternatively, they can be frozen. Arrange them on a tray in the freezer until they are completely frozen, then transfer them into food bags.
