Orzo Pasta with Peas

A creamy and tasty main course, orzo pasta with peas is easy to prepare and delicious. A complete dish that everyone loves, made with few ingredients, with fresh peas when in season, or frozen peas, made even creamier with a generous spoonful of stracchino cheese. If you like the classic version with rice, you can try the creamy pea risotto.

  • 10.5 oz orzo pasta
  • 10.5 oz peas
  • 1 onion
  • 1 carrot
  • 4.2 cups vegetable broth
  • 3 tbsps extra virgin olive oil
  • to taste salt and pepper
  • 1.1 oz Parmesan cheese

Steps for preparing orzo pasta with peas

  • First, coarsely chop one onion and one carrot. I used a red onion from Tropea, but feel free to use your favorite type. Sauté it in a saucepan with the extra virgin olive oil. Add the peas, fresh or frozen, and let them flavor for a few minutes.

  • Cook them for about ten minutes, adding some hot vegetable broth. Set some aside and blend until you get a cream. Add the orzo pasta and cook it as if it were risotto, gradually adding hot broth.

  • Add the pea cream and Parmesan cheese. Stir. I did not add salt because I salted the broth, otherwise add it during cooking. Serve and sprinkle with some good black pepper.

Storage

Orzo pasta can be stored for a couple of days in the fridge.
