Dessert with Leftover Croissants

Dessert with leftover croissants, a recipe to use up the day-old brioches, easy and quick and in different versions. The other day, taking advantage of a famous app that sells off leftover food, I picked up a bag at a bakery. Besides bread and small pizzas, the package also contained 2 plain brioches. Given the hour, I couldn’t consume them that same day, so the next day, I took the brioches but they had lost their crispness. I looked in the fridge and had a bit of cream and some blueberries to use up, and there I had a light bulb moment. I remembered seeing a video, maybe on Instagram, where croissants were broken up and cooked with eggs, sugar, and chocolate. So, I took my loaf pan that goes in the oven, air fryer, and microwave, and in 10 minutes the dessert with leftover croissants was already cooking. Ingredients

  • 3 croissants (1 or 2 days old)
  • 1 egg
  • 2 tablespoons sugar
  • 0.5 cup fresh liquid cream
  • 2 drops vanilla essence
  • 2.8 oz blueberries (or 1.4 oz of dark chocolate chips)

What You Need

  • 1 Air Fryer
  • 1 Loaf Pan aluminum

Procedure

  • Crack the egg into a bowl, add 1 tablespoon of sugar, the cream, and vanilla, and mix well with a hand whisk or fork.

    Cut the croissants into several pieces and place them in the pan. Top with blueberries or chocolate chips and then pour over the egg and cream mixture. Shake the pan to distribute the liquids well. Sprinkle the surface with the remaining tablespoon of sugar.

  • Place the pan in the air fryer and cook at 356°F for 13 minutes.

  • Place the pan in the microwave and start cooking with the combined microwave + grill (or Crisp) function, for 12 minutes.

Serve your dessert with leftover croissants as a spoon dessert, it will have a crunchy top and a creamy bottom. It is excellent served warm.

Extra Tips and Ideas

Instead of blueberries, you can use raspberries or pre-cooked and diced apples. If you like, you can replace them with a few teaspoons of peach jam or orange marmalade.
