Fennel, Orange, and Fresh Cheese Salad

Ingredients

  • 9 oz cleaned fennel
  • 1 orange (4 oz)
  • 3.5 oz fresh cheese
  • 6 taggiasca olives
  • to taste salt
  • to taste extra virgin olive oil
  • to taste pine nuts

Steps

  • Wash and clean the fennel from hard parts and fronds, setting aside a bit.
    Cut the fennel into quarters and slice thinly.

  • Peel the orange and cut it into slices, then divide into 4 wedges.

  • Continue by cutting the fresh cheese into cubes.

  • Combine the ingredients in a bowl, adding some finely chopped fennel fronds.

  • Add the olives and pine nuts, season with salt and extra virgin olive oil.

The fennel, orange, and fresh cheese salad is perfect if you have vegetarian guests for dinner; if they are vegan, simply leave out the fresh cheese 😀
