Today I’m sharing this delicious pasteurized mascarpone cream, a very simple recipe perfect for use in many dishes.
We all know pasteurizing eggs is a delicate process for everyone’s safety, unlike when we used to consume those from our grandparents’ farm-raised chickens; so I decided to try this cream with cooked eggs.
With this cream, I made my classic tiramisu recipe, a dessert that gets devoured in minutes at my house: my children and my husband really love it.
I decided to post this recipe before the Christmas holidays because with this cream, besides the classic tiramisu, you can fill Christmas panettone, cream puffs, and various desserts that you’ll find on my blog.

Ingredients for making pasteurized mascarpone cream
- 3 eggs
- 7 tablespoons sugar
- 500 g mascarpone
Steps for pasteurized mascarpone cream
To make the pasteurized mascarpone cream, place the butterfly in the bowl, add the sugar and eggs. Pasteurize for 15 minutes, at 176°F, speed 3.
Put the bowl in the fridge and let it cool for an hour.
Once ready, add the mascarpone. Mix the mixture for 40 seconds at speed 3.
Your cream is ready.
You can store the cream in the fridge for two days.
A useful tip: to get a thick cream, you need to let the mixture cool well in the fridge.
For those who are lactose intolerant, you can substitute with lactose-free mascarpone.
