Ingredients for preparing baked rice with pumpkin
- 14 oz Carnaroli rice
- Half Delica pumpkin
- 1 onion
- 1 quart vegetable broth
- to taste salt and pepper
- 1 tbsp chopped parsley
- 5 oz Asiago cheese

Steps for preparing baked rice with pumpkin
first, cut and clean the pumpkin by removing seeds and fibers. Place it on a baking tray covered with parchment paper. Season with salt and put it in the oven until it becomes soft. Then collect the pulp in a dish and mash it coarsely with a fork.
Chop an onion. Sauté it in a pan with 4 tablespoons of oil. Add and toast the rice. Cook it almost completely by adding the hot broth little by little and stirring often.
When a few minutes are left for the rice to be perfectly cooked, remove it from the heat. Add the pumpkin pulp, parsley, adjust with salt and pepper. Enrich with cheese cubes and stir.
Pour the rice into a lightly oiled baking dish. Finish with grated cheese, a drizzle of oil, and put it in a static oven at 350°F, static, until a golden crust forms (about 30 minutes).
Storage
Rice keeps for a couple of days in the fridge.
