Ingredients for Savory Pumpkin Fritters

  • 10.5 oz butternut squash (weight cleaned – only pulp)
  • 1 cup all-purpose flour
  • 1.75 oz grated Parmesan
  • 2 eggs
  • Half packet instant yeast for savory preparations
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch nutmeg
  • as needed peanut oil (for frying)

  • 1 Chopper
  • 1 Bowl
  • 1 Pan
  • Paper towels
  • 1 Spoon

Preparation of Savory Pumpkin Fritters

  • First, take the pumpkin, cut it in half, remove the internal fibers and seeds, then peel it and cut the pulp into cubes, you’ll need 300 grams. Now, finely chop it using a food processor, or you can grate it with a grater.

  • 1 – If using the Thermomix, chop the pulp at speed 4 for 30 seconds. It shouldn’t be puréed, but finely chopped. If you don’t have a Thermomix, you can use a chopper or a grater.

  • 2 – Put the chopped pulp in a bowl, add the flour, baking powder, and eggs. Mix.

  • 3 – Season with salt, pepper, and nutmeg.

  • 4 – Also add the grated Parmesan

  • 5 – Mix everything well

  • 6 – Meanwhile, place a pan with plenty of peanut oil on the stove. Heat it to 338°F, then start cooking the fritters by dropping spoonfuls of the batter. Try to cook only a few at a time.

  • Stir often to ensure even cooking. When they are nicely golden, use a skimmer to remove them from the pan. Place them on a plate covered with paper towels. Serve hot.

  • WITH THERMOMIX: Once the pumpkin is chopped, add the flour, Parmesan, eggs, yeast, salt, pepper, and nutmeg to the bowl. Mix at speed 5 for 20 seconds. When the batter is ready, you can start frying the fritters as described above.

Notes

It is better to use butternut or kabocha squash because their pulp contains less water compared to others.

You can use pecorino instead of Parmesan.

You can also add spices or aromatic herbs (sage or rosemary)
