Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 1/3 cups all-purpose flour
  • 1 packet baking powder
  • as needed lemon zest
  • 1 packet vanillin
  • 1 cup ricotta
  • 1/3 cup sugar
  • 1 egg
  • 1 packet vanillin

Steps

  • In a bowl, beat the eggs with the sugar and grated lemon zest.

  • Pour in the milk and oil, then incorporate the flour and baking powder.

  • Pour the batter into a baking pan lined with parchment paper, 12in x 8in,

  • and level it well to avoid the typical swelling in the center.

  • In a bowl, mix the ricotta with sugar, vanillin, and the egg into a cream.

  • Mix well, then pour the cream into a piping bag.

  • Fill the cake forming a grid pattern.

  • Bake in the oven at 350°F for about 25-30 minutes.

The sweet duvet cake can be stored under a cake dome for up to two days. It can be frozen.
