Perfect Salmon in 20 Minutes. Crispy Potatoes. One Air Fryer.: This recipe came about on one of those days when time is short, hunger is strong, but the desire to eat well is non-negotiable. The air fryer salmon fillet with potatoes, cherry tomatoes, and olives is the perfect solution when you want a complete, tasty, and light dinner without dirtying a thousand pans. Shall we prepare it together? I promise: zero complications, maximum results.

I tried it for the first time one Monday evening, when the desire to cook was zero and the fridge seemed to whisper “improvise”. I had a couple of salmon fillets, some leftover potatoes, and those cherry tomatoes screaming “use me before it’s too late.” From there, a dish was born that became a post-work classic: quick, satisfying, and irresistibly fragrant. Every time I make it, I feel like a bit of a chef, a bit of a minimalist magician.

Ingredients

  • 4 salmon fillets (about 5 oz each)
  • 6 potatoes (medium)
  • 10.5 oz cherry tomatoes
  • 3.5 oz olives (black pitted, I chose Taggiasca)
  • 4 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste aromatic herbs (freshly chopped)
  • to taste lemon (juice only recommended)
  • 1 clove garlic

You absolutely have to try it! It’s perfect to share with loved ones or just to pamper yourself at the end of the day. Imagine: warm dish, intoxicating aroma, a fork sinking into tender and flavorful salmon. Come on, turn on that air fryer.

  • 1 cutting board
  • 1 kitchen tongs
  • 1 serving platter

Steps

In a few simple steps, a simple and tasty seafood second course as good as at the restaurant.

  • 1. Peel the potatoes, cut them into wedges or cubes and blanch for 5 minutes in salted water.
    2. Drain and season with 2 tablespoons of oil, garlic, salt, and pepper.
    3. Meanwhile, preheat the air fryer to 392°F for 3 minutes.
    4. Place the potatoes in the basket and cook for 12 minutes, turning them halfway through cooking.

  • 5. In the meantime, season the salmon fillets with oil, salt, and pepper.
    6. After 12 minutes, lower the temperature to 356°F, move the potatoes to the sides and place the salmon fillets in the center.
    7. Also add the halved cherry tomatoes and the olives scattered in the basket.

  • 8. Cook everything together for another 8-10 minutes, until the salmon is cooked but still juicy.
