Soft Cake with Jam

The soft cake with jam is a recipe without butter, tasty, delicious, and very easy. I used my Thermomix for the dough, but you can also use electric beaters and, before baking it, I sprinkled the surface with cherry jam. It is truly a perfect cake for breakfast in the morning or for a genuine snack for our children.

I made this cake to celebrate my husband’s birthday. He requested a rustic, simple dessert that he could also enjoy at breakfast because he loves breakfast ring cakes, the ones you can dip into cappuccino. The choice could only fall on this wonderful recipe. I decided to prepare it in a square mold because, once cooked, cooled, and sprinkled with powdered sugar, I cut it into squares, so cute and lovely.

Ingredients for the Soft Cake with Jam

  • 3 eggs (medium size)
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sunflower oil
  • 1/4 cup coconut beverage (or rice, oat, etc.)
  • 1 3/4 cup all-purpose flour
  • Half packet baking powder for desserts
  • to taste jam (cherry, strawberry, apricot, etc.)
  • to taste powdered sugar

Prepare the Soft Cake with Jam

  • Put the butterfly whisk in the bowl, add the sugar, eggs, and vanilla extract, start for 1 minute at speed 4. Add the milk and sunflower oil, 40 seconds at speed 4.

    Remove the butterfly whisk and add the all-purpose flour and baking powder: 2 minutes at speed 4. Pour the mixture into the pan, oiled and floured, and add spoonfuls of jam on the surface.

    Bake and cook in ventilated mode for 45 minutes at 340°F. Once cooked, take the cake out, let it cool before removing it from the mold, and sprinkle with powdered sugar before serving.

Storage

The soft cake can be stored in a closed container or cake holder for up to 3 days.
