Linguine with Cod

Linguine with Cod could be the first course for Christmas celebrations where fish takes center stage among the dishes on our tables, yet it’s perfect all year round whenever you desire it.

Cod is one of the most beloved ingredients in culinary tradition, a classic of Italian cuisine prepared in various ways, with tomato or in white.

In my recipe, I’ve prepared it with some cherry tomatoes to add a hint of color.

If I’ve piqued your curiosity, all that’s left is to check the ingredients you need and prepare it. Naturally, it will take a couple of days to desalt the cod by soaking it in water and changing it frequently.

Ingredients

  • 9 oz linguine
  • 12 oz desalted cod
  • 1 lb cherry tomatoes
  • 1.4 oz Taggiasche olives
  • 1 glass white wine
  • 1 tbsp pickled capers
  • 1 leek
  • to taste salt
  • to taste white pepper
  • to taste extra virgin olive oil

Steps

  • Clean and slice the leek into rounds.

  • Continue with the cherry tomatoes, washing them and cutting them into quarters.

  • In a pan, pour some extra virgin olive oil and the sliced leek

  • Let it soften over low heat for a few minutes, stirring often.

  • Incorporate the cherry tomatoes and mix.

  • Add the soaked cod pieces and deglaze with white wine, let it cook for 10 minutes.

  • Finish by adding the rinsed and drained pickled capers and the Taggiasche olives.

  • Add some salt if needed and cook for another 10 minutes over low heat.
    If needed, add a bit of warm water and during cooking, break the cod into small pieces with a fork.

  • Cook the linguine and toss them directly in the sauce pan.
