Ingredients for making the cake with blended oranges in the microwave
- 3 eggs (at room temperature)
- 1 cup sugar
- 1/2 cup olive oil (+ for greasing the pan)
- 2 cups all-purpose flour (+ for dusting the pan)
- 1 packet baking powder
- 2 oranges (untreated, weighing 250 g (9 oz))
- 3.5 oz dark chocolate 60-69%
What You Need

- Electric Mixer
- 1 Strainer fine mesh
- 1 Microwave Pan heat-resistant material (Crisp)
- 1 Microwave Oven with combined function
- Parchment Paper
- 1 Plastic Wrap
Procedure
Wash and dry the oranges, cut off any woody stem and then cut them into pieces. Distribute the oranges in the blender jug and blend first with intermittent strokes and then more steadily, until you create an orange pulp.
Crack the eggs into the bowl, add the sugar, and with the help of the electric mixer, whip them until you obtain a light and frothy mass. Gradually add the oil while continuing to whip with the mixer.
Sift the flour with the baking powder and incorporate it into the whipped mass, don’t worry if it seems very solid, the addition of the blended oranges will give the right consistency.
At this point, add the oranges and fully mix them into the batter.
Grease and flour the pan and then pour in the batter, if necessary, level it with a spatula. Insert the orange cake in the microwave and start cooking for 16 minutes with the combined microwave + grill function (or Crisp), choosing, if possible, a wattage around 350 watts. After 12 minutes, cover the cake with a sheet of parchment paper, so that it does not darken on the surface.
At the end of cooking, let it rest for a couple of minutes and then unmold the orange cake onto a wire rack. To keep it moist longer, cover the cake with a sheet of plastic wrap.
To make a chocolate-covered orange cake, simply break the chocolate into pieces and place it in a small bowl, melt the chocolate in the microwave for about 2 minutes, stirring occasionally, choosing a power around 300 watts. I advise against higher powers to avoid burning the chocolate, giving it a bitter aftertaste. Pour the melted chocolate over the orange cake and immediately level it with a spatula. Let it set and then cut into slices and serve.
Rosella’s Tips
The orange cake keeps for 2-3 days at room temperature. To make it last longer, you can store it in the fridge in an airtight container or cover the cake with a sheet of aluminum foil.
Gluten-Free Microwave Orange Cake
To make a gluten-free orange cake with blended oranges, simply replace the flour with 125 g of rice flour and 125 g of cornstarch. You can also use rice flour for preparing the mold.
