These quick savory snacks with olives and sun-dried tomatoes are prepared in just a few minutes, using classic puff pastry and a flavorful ricotta-based cream. Simple squares are cut out, which are then garnished on top with oregano, grana, and poppy seeds… after baking in the oven, the savory snacks will be ready, delicious and appetizing, you’ll see they’ll disappear in no time!

Ingredients
- 1 roll puff pastry (rectangular)
- 3.5 oz ricotta (or spreadable cheese)
- 5 sun-dried tomatoes
- 1 tbsp taggiasca olives (or black, pitted)
- 1/2 tbsp breadcrumbs
- Grana Padano, grated
- 1 egg
- oregano
- poppy seeds (or other seeds of choice)

Preparation
Finely chop the sun-dried tomatoes and olives, using a knife or a food processor. If using products in oil, first dry them well of excess oil with kitchen paper.
Place the mixture in a bowl, add the ricotta and breadcrumbs and mix. If necessary, add a pinch of salt, but it should not be needed.
Unroll the puff pastry and spread the mixture over half of it (1).
Fold over the other half, pressing gently. With the pastry wheel, cut squares of equal size, without separating them from each other (2), so they do not “open” during baking. I made 35, but you can make them a bit larger, or rectangular.
Brush the surface with the beaten egg, then sprinkle with grated grana, oregano, and poppy seeds (3).
Transfer everything onto a baking tray and place in a fan oven at 355-365°F. Bake for 20-25 minutes, or until golden brown (4).
Once done, remove from oven and separate the savory snacks, going over the cuts with the pastry wheel or a knife.

Tips and Notes
You can use ricotta or creamy cheese like Philadelphia.
The breadcrumbs help absorb any excess liquid, feel free to replace them with more grana.
You can sprinkle the snacks with other dried herbs, or even a pinch of sweet paprika.
