Mimosa Roll with Cream and Strawberries

The mimosa roll with cream and strawberries is a delicate dessert dedicated to all the Women who do not love the traditional mimosa cake.

Based on biscuit dough and cigarette dough decorated with a floral pattern reminiscent of mimosa flowers, this rolled dessert is very similar to another roll I made years ago, the red one.

Cigarette dough is a pastry preparation that uses powdered sugar, flour, butter, and egg whites in equal quantities and is then colored depending on its use.

Perhaps I should have used a bit more yellow dye to make the mimosa flowers because I didn’t consider that after baking, it might blend with the color of the biscuit dough, but I had a lot of fun and will certainly learn from this mistake for the future.

Ingredients

– I made the custard using the two egg yolks left over from the cigarette dough; usually, in my recipe, you’ll find whole eggs.

  • 2 oz egg whites
  • 1/3 cup powdered sugar
  • 3 1/2 tbsp butter (soft)
  • 1/3 cup all-purpose flour
  • food coloring (a small amount of yellow and green)
  • 6 oz eggs (equivalent to 3 medium)
  • 1/2 cup all-purpose flour
  • 1 tsp potato starch
  • 1/3 cup granulated sugar
  • lemon zest
  • 2 cups whole milk
  • 2 egg yolks
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tbsp rice starch
  • lemon zest
  • vanilla (extract or bean paste)
  • 10 1/2 oz strawberries
  • powdered sugar

Steps

  • – Pour the soft butter and powdered sugar into the bowl and mix well, then add the slightly beaten egg whites.

  • – Mix the egg whites, and when they are incorporated into the butter and sugar mixture, add the flour. Form a smooth, lump-free dough. Divide into two bowls.

  • – Pour the two food colorings into the bowls and mix. Put the two colored mixtures into piping bags, cut the tip, and draw the mimosa flowers on the parchment paper (first the yellow dots, then the stems). Place the baking sheet in the freezer for at least 20′ and, in the meantime, prepare the biscuit dough.

  • PREHEAT THE OVEN TO 340°F

    – Whip the egg whites to stiff peaks and set aside. Beat the egg yolks with the sugar until light.

  • – Add the sifted flour, grated lemon zest, and mix. Add a few spoonsful of whipped egg whites to lighten (mixing with a little energy), then continue adding the egg whites little by little, mixing gently from bottom to top. Spread the biscuit dough on the frozen cigarette dough and bake at 340°F for about 10′

  • – Out of the oven, gently remove the parchment paper, place the rectangle on a clean sheet of parchment paper with the designs in contact with the sheet, and roll gently. Sometimes I place a slightly damp clean cloth under the parchment paper, which helps keep the biscuit dough soft

  • – Unroll the biscuit dough gently and fill it with custard and previously washed, dried, and chopped strawberries. Roll from the long side and place in the fridge for at least 2 hours.

  • – Serve the roll dusting a little powdered sugar on the surface.

    – With strawberries, whipped cream with 2/3 tablespoons of powdered sugar and vanilla flavoring works perfectly.

    – Yes, you can freeze it for about a month by transferring the creams into clean containers.
