Ingredients
- 2 eggs (large size)
- 5 oz butter
- 2 1/2 cups all-purpose flour
- 1/4 cup stevia
- 4 tsps ground cinnamon
- 3 tsps unsweetened cocoa powder
- 1 tsp ground ginger

Steps for Sugar-free Christmas Cookies
Place the room temperature butter cut into pieces, the eggs, and the stevia in the stand mixer bowl, attach the flat beater and set to speed 2 for 2 minutes.
Then, add the flour and the spices to the stand mixer bowl, set to speed 2 for 4 minutes, turn off and transfer the mixture to the work surface, shape into a dough ball, cover with plastic wrap and refrigerate for 1 hour or freeze for 30 minutes.
After resting, take the dough, roll it out to a thickness of 1/8–3/16 inches with a rolling pin, using a little flour if needed, cut circles with a diameter of 1 1/2–2 inches, re-knead the scraps and roll and cut again until all the dough is used up. You should get 20 dough discs with these amounts.
Place the dough discs on a baking sheet with parchment paper, use the stamp to imprint the design on each cookie, preheat the electric oven to 392°F and once hot, bake for 20–25 minutes, remove from the oven, let cool and serve! Enjoy my sugar-free Christmas cookies!
