Sugar-Free Christmas Cookies

These delightful sugar-free Christmas cookies, spiced and fragrant, are perfect to make with the kids! I made them sugar-free as I am diabetic and experiment a lot with sugar-free recipes, but I assure you they were loved by everyone at home. During baking, they release a pleasant aroma that will fill your house! You can also gift them at Christmas, they will be much appreciated like all homemade Christmas gifts!

Ingredients

  • 2 large eggs
  • 5 oz butter
  • 2.5 cups all-purpose flour
  • 1.75 oz stevia
  • 4 tsps ground cinnamon
  • 3 tsps unsweetened cocoa powder
  • 1 tsp ground ginger

Steps for Sugar-Free Christmas Cookies

  • Place the room temperature butter, cut into small pieces, eggs, and stevia in the stand mixer bowl, attach the flat beater and run at speed 2 for 2 minutes.

  • Then add the flour and the required spices into the stand mixer bowl, run the mixer again at speed 2 for 4 minutes, turn off, and transfer the mixture onto the work surface. Shape into a dough ball, cover with plastic wrap, and place in the fridge to rest for 1 hour or in the freezer for 30 minutes.

  • After resting, take the dough, roll it out with a rolling pin to a thickness of 1/8 inch, using a bit of flour if needed. Cut circles with a diameter of 1.5-2 inches, re-knead the scraps and roll out and cut again until you use all the dough. In the end, with these quantities, you should get 20 dough discs.

  • Place the dough discs on a baking tray lined with parchment paper, use the stamp to imprint a design on each cookie, preheat the electric oven to 390°F and once hot, bake for 20-25 minutes. After baking, remove from the oven, let cool, and serve! Enjoy my sugar-free Christmas cookies!
