Zucchini and ricotta frittata is the best you can find because it’s my grandmother’s recipe!
I thought of sharing it with you because it’s such a simple frittata recipe, but I assure you, it’s really good!
This morning I went to the market, and beautiful zucchinis with a lovely green color stood out.
My little head was saying ‘buy them’. I bought quite a few because we love zucchinis no matter how they’re cooked.
The recipe I propose is super easy and super delicious: ZUCCHINI FRITTATA with ricotta! And it’s light, which is perfect for the swimsuit season.
Easy to prepare, you put it in the oven or the fryer, and you don’t have to think about it for at least half an hour! There’s no risk of burning it in the pan or forgetting it on the stove!
Super tasty, the zucchini frittata will please everyone, both adults and kids! You can serve it as a main course or as an appetizer or for a buffet with friends.
Preparing it is simple: just cook the zucchinis for 15 minutes in a pan with onions, then mix them with eggs and the rest of the ingredients.
Delicious eaten hot, warm, and even cold!
Perfect to bring as lunch to the office, to eat under the umbrella at the beach, or on a picnic in the mountains!
In short, a simple, fresh, and vegetarian frittata to propose whenever you have little time and lots of zucchinis in the fridge!
These zucchinis can be cooked in a traditional oven, convection, or in an air fryer: all three methods are described in the recipe.

Zucchini and Ricotta Frittata
- 4 zucchini (large)
- 5 eggs
- 200 g ricotta
- Half onion
- 50 g parmesan
- salt
- pepper
- to taste extra virgin olive oil

Steps
Zucchini and Ricotta Frittata
First, clean the zucchini well, dry them with kitchen paper, cut off the ends, cut them in half lengthwise, then slice them. Wrap them in kitchen paper or a cloth for at least 10 minutes to let them lose the liquids.
In a large pan, pour the extra virgin olive oil and sauté some finely chopped onion over low heat.
Add the zucchini.
Lower the heat to medium and let them cook slowly, turning occasionally to let them absorb the flavor.
Now, in a large bowl, beat the eggs with grated cheese and ricotta with a bit of salt and a pinch of pepper.
When the zucchini are cooked but still firm, add them to the bowl with the eggs and mix everything well.
Line or grease a 9.5/10-inch cake pan or baking dish.(Depending on how thick you want it).
Bake the savory pie in a preheated oven, in convection mode at 365°F, for about 20-25 minutes or until the crust has reached a nice golden color.
If you have a static oven, bake the savory pie at 365°F for about 30-35 minutes or until the crust is well browned.
If you have an air fryer, prepare the savory pie in the fryer basket, in the same way as described in the recipe, then cook it at 375°F for about 18-20 minutes, or until the crust edges are golden.Of course, always check as both the oven and the fryer may vary cooking times.
Once ready, serve our air fryer frittata cut into wedges or squares.

Tips
Choose the pan based on the size of the air fryer basket and make sure it is made from material suitable for this type of cooking.
If you don’t have an air fryer, use a 9.5/10-inch pan or baking dish greased with oil, otherwise bake in the oven at 350°F for 15/18 minutes.
This is a vegetarian version; if you want it richer, you can add diced cooked ham, and it will be delicious.
