Braised Romano beans in the pressure cooker, a seasonal side dish rich in vitamins, minerals, and plenty of fiber.
For this recipe, you can use either Romano beans or snow peas; they look similar but belong to two different families, one to peas and the other to beans.
They also differ in size; Romano beans are much longer (up to 8 inches) and wider and are a less bright green, while snow peas are bright green, smaller, and more expensive.

Ingredients for braised Romano beans in the pressure cooker:
- 1.5 lbs fresh Romano beans or snow peas
- 1 large yellow onion
- 3 tbsps extra virgin olive oil
- 12 oz canned peeled tomatoes + their juice (a scant can)
- to taste fine salt

Steps for preparing and cooking braised Romano beans or snow peas in the pressure cooker:
Thoroughly wash the Romano beans or snow peas under running water, then place them in a bowl (without water) and one by one, use a knife or scissors to remove the two ends. If the snow peas are large, cut them in half.
Peel the yellow onion, cut it in half, and slice it thinly.
In the pressure cooker, add the extra virgin olive oil and turn on the heat. When hot, add the sliced onion and cook for a few minutes until it starts to become translucent. Then add the Romano beans and stir well to blend flavors. Lastly, add the peeled tomatoes (cut into pieces) and the tomato juice (we used canned peeled tomatoes and did not add all the juice, or it would be too watery), and season well with salt.
Place the lid on the pressure cooker, ensure the valve is properly closed, then bring the cooker to pressure over medium heat. Once at pressure, lower the heat and cook for 8 minutes.
After the time has elapsed, turn off the heat and release the pressure. Remove the lid right away, as leaving the cooker pressurized would overcook the vegetables.
Place the braised snow peas on a serving plate with the onions and tomatoes and some of the liquid, and serve immediately.
COOKING IN THE MULTICOOKER:
Same ingredients and cooking times, start by sautéing the onion using the sauté program, then after adding the other ingredients, close the lid and cook for 8 minutes using the pressure cooking mode.
After the time has elapsed, turn off the cooker and release the pressure immediately. Remove the lid and serve your side dish immediately.
