Microwave zucchini lasagna is a quick first course suitable for holidays. Made with microwave béchamel, thinly sliced raw zucchini, and lasagna sheets, they melt in your mouth. After trying microwave pesto lasagna and microwave vegetarian lasagna, I wanted to try this version of microwave-cooked zucchini lasagna. My daughter loves them so much that when I make them, I also take the opportunity to prepare some jars of jar-cooked zucchini lasagna, so I can preserve them for 15 days. Making baked pasta in the microwave saves energy, 1 because the oven does not need to be preheated (a time when it consumes more, 2 because cooking times are halved and 3, because they remain soft and perfectly gratinated, without having to follow the cooking process.

Ingredients
- 2 cups béchamel
- 5 sheets thin egg lasagna
- 14 oz zucchini
- 7 oz scamorza cheese
- 2 tablespoons grated Parmesan cheese

How to Make Microwave Lasagna
Wash and trim the zucchini, and slice them thinly using a mandoline. Meanwhile, grate the well-chilled scamorza cheese with a coarse grater*.
Spread some béchamel over the bottom of the baking dish, place a sheet of lasagna, and continue with more béchamel, zucchini slices, some scamorza cheese, and repeat until all layers are assembled. Finish with zucchini slices and sprinkle the surface with grated cheese.
Place the baking dish in the microwave and start cooking for 15 minutes with the combined microwave + grill function (or Crisp). At the end of cooking, let the zucchini lasagna rest in the turned-off microwave for 5 minutes, then serve.
Rosella’s Tips
Grating stringy cheeses with a coarse grater increases their yield and allows for better distribution in each layer. Alternatively, slice it into very thin slices.
Dry Lasagna with Zucchini in Microwave
If you prefer using dry lasagna sheets, follow two steps: prepare a béchamel with less flour for a more fluid sauce and do a first bake of the lasagna covering the dish with microwave-safe plastic wrap (making two small holes), cook for 10 minutes at 600 watts, then remove the wrap and continue cooking with the grill function for another 10 minutes.
