Eggs alla Carrettiera

Ingredients

  • 2 eggs
  • 2 tablespoons of bread crumbs
  • 2 tablespoons of pecorino romano
  • 1 bunch of parsley
  • 1 clove of garlic
  • to taste of salt
  • to taste of extra virgin olive oil
  • to taste of chili pepper

Steps

  • In a non-stick pan, toast the bread.

  • Pour the bread into a bowl and add the pecorino romano and a little finely chopped garlic.

  • Add a pinch of chili pepper and parsley, mix it all together.

  • Heat the pan with a little extra virgin olive oil and gently add the eggs, avoiding breaking the yolk, season with a pinch of salt.

  • Cover with a lid and cook for 3/4 minutes, the time needed for the egg white to cook.

  • Pour the bread mixture in, cover with the lid, and cook for another minute.

  • Plate and serve at the table.
