Ingredients
- 3 cups water
- 7 oz Swiss chard
- 5 oz pumpkin
- 3 potatoes
- 3 carrots
- 2 zucchini
- 1 leek
- 1 onion
- 1 tomato

Steps
To prepare the minestrone with Cookeo, you must first wash all the vegetables thoroughly from any impurities.
Take the leek, remove the ends, the first outer leaf, and then cut it into rather thin rings.
Peel the onion, remove the ends, and chop it into small pieces.
Remove the ends of the zucchini, cut it first in half lengthwise and then in half again. Now cut into small pieces.
Peel the potatoes, wash them, and cut them into cubes about 1/2 inch.
Wash the Swiss chard, squeeze it, remove any bad leaves, and chop it finely.
Do the same with carrots and pumpkin, cut everything into cubes after removing the skin.
Cut the cherry tomatoes in half, or if you have a large tomato, dice it.
Pour a drizzle of extra virgin olive oil into the Cookeo, add all the chopped vegetables inside and cover with water.
Adjust the salt, close the lid with the valve, and set the manual function, pressure cooking for 20 minutes.
Start cooking, and as soon as it is ready, let it vent safely, and when it allows you to open the Cookeo, serve the minestrone hot.
If you wish, you can blend everything to obtain a delicious velouté.
STORAGE
Store the minestrone with Cookeo in the fridge, closed in an airtight food container, for up to 3 days.
You can freeze the minestrone for up to 3 months if desired.
