The barley and spelt soup with mixed legumes is a simple, healthy, and hearty main dish, warm and enveloping for the coldest days.
It can be considered a complete meal for those on a diet, where it’s recommended to consume legumes at least twice a week.
The barley and spelt soup with mixed legumes is an economical dish due to its low-cost ingredients, yet rich in plant proteins made from healthy ingredients.
In my recipe, you will prepare the dish in a short time. I used pre-cooked mixed legumes and grains for a quicker cooking, soaking them for a few hours. If you want to reduce the time even more, you can also use pre-cooked grains.
If you love grains, here are other recipes for you!
