The crumbly hazelnut shortbread dough, which has an amazing aroma even when raw, is the star of this recipe, or rather this tutorial, because the recipe for the shortbread dough is already on the blog. But you can also make the cookies with the basic shortbread dough or the cocoa one.
In short, it’s just a sweet and cute idea to make a nice gesture, prepared with love.
I used rectangular molds, but a glass or any other shape works fine too.
The quantities given in the recipe are for the hazelnut shortbread dough, but I used about 200g and froze the rest.

Ingredients
The indicated times refer to the execution and resting of the cookies in the fridge and not to the shortbread dough which should rest for at least 2 hours after preparation.. both the natural and the red one
- 8 1/2 tbsp butter (not too soft)
- 3/4 cup powdered sugar
- 1 large egg
- 1 cup toasted hazelnuts
- 1 3/4 cup all-purpose flour
- 1 pinch red food coloring

Steps
– Make the hazelnut shortbread dough following the recipe calculate how much dough you want to use and then take a small piece of about 20g to color. The shortbread dough should rest in the fridge for at least 2 hours.
– Add a pinch of red food coloring powder to the dough in the stand mixer and give it a few turns with the paddle attachment until the dough becomes red. Compact, wrap in parchment paper and refrigerate for at least 2 hours.
– After resting in the fridge, roll out the red shortbread dough and use a small mold to cut the flowers. Then roll out the hazelnut shortbread dough and cut the cookies. Place everything on a micro-perforated mat or a baking sheet lined with parchment paper. With 200g you get 6 medium cookies. Place the flowers on a corner of the cookie, applying slight pressure.
With a straw or some tool that can make small holes, make 2 equidistant holes (I used a broken flower mold).
– Place the baking sheet in the fridge and preheat the oven to 356°F. Then bake for about 12/13 minutes
– Let the cookies cool completely, then thread the ribbon starting from underneath, prepare the card, roll it up, and then finish the shortbread by tying the ribbon with a bow.
Storage:
– They can be stored in a box or cookie container.
