Tomatoes are the stars of summer, and every year I look for new ideas to enhance them in the kitchen. Today I propose these honey and thyme tomatoes cooked in the air fryer, an aromatic, simple, and truly surprising side dish.
The combination of the sweetness of HONEY and the fresh aroma of thyme transforms the tomatoes into a delicate and flavorful dish, perfect to serve with fresh cheeses like burrata or juicy buffalo mozzarella, crostini, or alongside light main dishes.


For this recipe, you can use:
– classic vine tomatoes,
– ribbed tomatoes for a more rustic version,
– or the ones I used, beefsteak tomatoes, which are meatier and juicier.
Cooking them in the air fryer saves time, avoids turning on the oven, and you still achieve perfect caramelization in less than 15 minutes.

Ingredients

  • 4 tomatoes (ripe and firm)
  • 2 teaspoons wildflower honey
  • 1 teaspoon apple cider vinegar (or balsamic as desired)
  • to taste extra virgin olive oil

Few steps for juicy tomatoes

  • I cut the tomatoes in half and place them on a plate with the cut side up.

  • In a small bowl, I mix:
    – honey
    – vinegar
    – 2 tablespoons of oil
    – a pinch of salt and pepper.

    I pour the sauce over each tomato and add a few fresh thyme leaves.

  • I gently transfer the seasoned tomato halves into the air fryer basket (I chose to place perforated parchment paper at the bottom).

  • I cook at 392°F for 12-15 minutes while checking the cooking level: they should become soft and slightly caramelized.
