Anchovies belong to the category of blue fish that can be cooked in many ways: marinated, fried with or without breading, they can be a condiment for a plate of pasta or a marinara pizza. And then there are those like me who prefer to bake them in a casserole. Even this way, they maintain their unmistakable flavor, obviously accompanied by cherry tomatoes and various spices. In short, this fish is truly versatile and allows us to create different and tasty dishes.
Like every traditional recipe, there are different versions. Today I’m giving you the original recipe for anchovies in a casserole that my grandmother in Naples makes.
It’s an extremely easy and quick preparation! Especially if you buy the anchovies already cleaned!
Anchovies in casserole can be served along with other fish first courses, Shrimp and Lemon Risotto, Fusilli with Cuttlefish or any sea-flavored first course.

Anchovies in Casserole Ingredients
- 1.1 lbs anchovies
- 8 cherry tomatoes
- salt
- parsley (or mint)
- 3.5 oz bread (crumbled)
- 2 garlic cloves

Anchovies in Casserole Steps
First, clean the anchovies by removing the head, bone, and tail. Then rinse them thoroughly and set aside in a colander.
Wash the cherry tomatoes and cut them into small pieces.
Take the mint or parsley, wash it well, and cut it with a knife.
Peel the garlic and chop it into small pieces. Take a 9.5-inch casserole and add a drizzle of extra virgin olive oil.
Start arranging the anchovies in a radial pattern throughout the casserole.
Add the stale bread, cherry tomatoes, garlic, salt, and parsley.
Close with the anchovies and continue like this forming three layers.
Add a drizzle of oil and bake in a fan oven at 340°F for about 15/20 minutes.
Let the surface brown well.
