Sugar-Free Water Cake

Ingredients for the Sugar-Free Water Cake

  • 2 1/2 cups all-purpose flour
  • 2/3 cup water
  • 2 tbsps extra virgin olive oil
  • 1/4 cup stevia
  • 2 eggs (medium size)
  • 1 packet baking powder
  • 1 tsp stevia (to grind and use instead of powdered sugar)
  • as needed oil and flour (for the pan)

Preparation of the Sugar-Free Water Cake

  • In a bowl, work the eggs with stevia, water, and oil with a spoon for a few minutes (just 2 minutes are enough).

  • Add sifted flour and baking powder, pouring them into the liquid mixture little by little and mixing from bottom to top, proceed this way until all ingredients are used, you should obtain a thick and lump-free mixture.

  • Lightly oil and flour the cake pan, pour the batter and tap slightly on the bottom, preheat the oven to 392°F and when it’s at temperature, bake.

  • Bake for 40 minutes and always check towards the end of cooking by doing the toothpick test because every oven is different, once the cake is well cooked, remove it from the oven, let it cool, and once cooled, remove it from the mold.

  • Before serving the sugar-free water cake, grind 1 teaspoon of stevia until it’s fine and sprinkle it over the cake as if it were powdered sugar, serve and enjoy, bon appétit!

Tips

You can flavor the sugar-free water cake with grated lemon or orange peel (of course, untreated).
