Meat and vegetable stew, even if it’s not exactly a true stew. In fact, the stove is missing, which is the basis of this dish; it was once used as a cooking method and hence it seems that it was called meat and vegetable stew for a very long time. But for stew, it also refers to a slow cooking method with broth or tomato. My recipe was a complex one, indeed more of a one-dish meal with meat, vegetables, and bread, but also fruit like apples that I love to often add to my savory meat dishes, all accompanied by fresh herbs just picked from the garden.

Ingredients for preparing the meat and vegetable stew

  • 1 eggplant
  • 2 onions
  • 3 Golden apples
  • 12.35 oz delica pumpkin
  • 7.05 oz ground beef
  • 3.53 oz rustic bread
  • Half head garlic
  • 2 tbsps extra virgin olive oil
  • 1 tsp salt
  • 6 sprigs chives
  • 2 sprigs rosemary
  • 1 sprig thyme
  • 1 bunch sage

Steps necessary to prepare the meat and vegetable stew

  • Cut the slices of rustic bread into pieces, place them in the oven on a baking tray for 15 minutes, and toast them.

  • In a large pan, brown the garlic with a good drizzle of extra virgin olive oil, then add the chopped onions along with the apples, also cut into pieces. Tie the herbs with kitchen twine and add those too. Separately, cook the ground beef in a pan with a small amount of extra virgin olive oil and add it to the onions and apples, mix everything well, also add the slightly toasted bread and salt.

  • Place all the stew on a baking tray and bake in a preheated oven at 356°F (180°C) for 30 minutes until fully golden.

  • Cut the eggplant in half and make crosswise cuts on both sides, season it along with the pumpkin with garlic and rosemary, with thyme and some bay leaves, of course salt with extra virgin olive oil and thyme leaves. Place the tray in the oven at 356°F (180°C) for 30 minutes.

  • After the time has passed, keep the cooked vegetables warm until serving.

  • Divide the meat stew into individual plates and accompany with the vegetables and fresh chopped chives.

  • Can you replace ground beef with sausage?

    Yes, of course, you can easily replace the ground beef with luganega or sausage to prepare the stew.
