Ingredients
- 1 roll puff pastry (rectangular)
- 14 oz pumpkin (already cleaned)
- 3 oz provolone
- 2.5 oz speck (or smoked ham)
- 1 egg
- sesame seeds (or poppy seeds)
- extra virgin olive oil
- salt

- Parchment paper
- Pastry wheel
- Bowl

Preparation
Slice the pumpkin into slices 0.3 inches thick, place them on a tray lined with parchment paper, lightly salt them and drizzle with a little olive oil.
Bake them in the oven at 356°F for about 15 minutes, or until they are tender.
Lay the puff pastry on the work surface and divide it into 3 sections.
In the central part, place a layer of speck slices, then the pumpkin (1), followed by the provolone slices (2) and the remaining speck (3).
Cover the filling with part of the pastry, and cut the remaining pastry into strips using the wheel.
Now overlap the strips, twisting them with your fingers as shown in the photo (4).
Transfer the strudel to a baking tray, brush the surface with the beaten egg and sprinkle with the seeds (5).
Place the pumpkin strudel in a fan oven at 356-374°F and bake for 25-30 minutes, or until golden and dry. As always, adjust based on your oven’s characteristics.

Tips and Notes
You can use provolone, smoked cheese, or mozzarella for pizza.
You can use speck, cooked speck, or smoked cooked ham.
Try to use a pumpkin with firm and dry flesh; otherwise, it will release liquid and soak the puff pastry. If you prefer, you can grill it instead of baking it.
