A quick and easy recipe to cook peppers in the air fryer in an alternative way with a result identical to classic oven or grilled roasted peppers.

To make them, just wash them well, dry them, and put them whole in the air fryer basket, and in a few minutes of cooking, they are ready!


Without releasing odors, without oil or fats, even cooking, soft but not mushy, and thanks to the air fryer’s ventilated function, the skin will easily come off. I love this cooking method also because they peel immediately without effort!

Once peeled, the roasted peppers should be cut into strips. You can enjoy them right away as a side dish seasoned with a drizzle of oil, salt, parsley, and, if desired, lemon juice, or you can freeze them in food bags for up to 6 months to have them always ready for the entire winter or they can be made into Natural Pepper Preserves.

  • 4 bell peppers (2 red and 2 yellow)
  • to taste extra virgin olive oil
  • 1 clove garlic
  • to taste capers
  • to taste Taggiasca olives
  • salt

Steps

Air Fryer Roasted Pepper Salad

  • Wash the peppers and place them whole in the air fryer basket.
    Or on the appropriate air fryer shelves
    Cook at 392°F for 20/25 minutes, turning them halfway through cooking.
    (I’d like to remind you that each air fryer has its own timing and degrees, so check accordingly).

  • Once cooked, place them still hot in a plastic or paper food bag, seal and let cool for 10 minutes, this way they will peel immediately.

  • This way, thanks to the steam, the skin will start to detach, making it easier to peel them.

    Be careful to remove it all, including the seeds and internal filaments, which make peppers indigestible.

  • Air Fryer Roasted Pepper Salad
  • Cut the peppers into strips and place them in a bowl.

    Season with salt and pepper, olive oil. I also add black olives and capers, (but you can also add anchovies).

  • Mix and let sit for 30 minutes before enjoying your salad peppers.

Advice

Cooking times may vary depending on the size of your peppers. Adjust accordingly.

I used red and yellow peppers, but you can choose the varieties you prefer.

You can freeze them in strips in food bags for up to 6 months.
You can store them in the fridge in an airtight container for 3 days.
